Full detailed method
  1. 1Line a 24-hole mini cupcake tray with cases.
  2. 2Whisk flour, sugar, baking powder, baking soda and salt.
  3. 3In another bowl whisk oil, yoghurt, milk and vanilla. Fold into the dry until just combined.
  4. 4Fill each case ⅔ full. Bake at 170°C for 13–15 mins until a skewer comes out clean. Cool fully.
  5. 5Make the buttercream — always start with the butter alone: place the softened butter (it should give easily to a finger press but not look greasy) in a large bowl. Using an electric hand whisk, or a stand mixer fitted with the paddle attachment, beat on medium-high for a full 4–5 minutes, scraping the bowl once or twice. It should turn almost white, light and airy — this is the step that makes buttercream silky. With a hand whisk (no electric), beat vigorously for 6–8 minutes until pale.
  6. 6On the lowest speed, add the icing sugar one heaped spoonful at a time so it blends in without a sugar cloud. Scrape down the bowl. Add the milk and vanilla, then turn back up to medium-high and beat for another 3–4 minutes until pale and fluffy. Pipe soft swirls onto each cupcake using a small star nozzle and finish with sprinkles.
