- 🥭 Stir the mango pulp into the batter.

Full detailed method
- 1Whisk flour, baking powder, baking soda and salt.
- 2In another bowl whisk sugar, oil, mango pulp, milk, vanilla and lemon juice.
- 3Fold wet into dry. Divide between 12 lined cases.
- 4Bake at 175°C for 18–20 mins until a skewer comes out clean. Cool fully.
- 5Make the mango buttercream — start with the butter on its own: put the softened butter in a large bowl. Using an electric hand whisk, or a stand mixer with the paddle attachment, beat on medium-high for 4–5 minutes, scraping the bowl once or twice, until almost white, whipped and airy. Only with a hand whisk (no electric)? Beat vigorously for 6–8 minutes.
- 6On the lowest speed, add the icing sugar a heaped spoonful at a time. Once combined, add the thick mango pulp (must be really thick — thin pulp will loosen the frosting too much) and beat back on medium-high for 3–4 minutes until pale, fluffy and silky. If it slackens, chill 15 minutes before piping. Pipe swirls with a large star nozzle and top with mango cubes.
